I carried 3 lenses during my recent trip along with 7D.
1. Tamron 17-50mm f.28 VC(95% of the time it was on my camera)
2. Canon 55-250 kit lens - 4.5% of the time.
3. 100mmL Macro - 0.5%.
Most of the photos were "I was there" kind of shots, so 17-50 was perfect. I bought Tammy just before the trip since I found 24-105(rented) was just not wide enough for my taste on 7D. I found 55-250 was useful near the water pools to avoid water falling on the camera and the lens.

Visited Singapore last week. Used 270EX for fill flash many times. The power was just not enough outdoor. Flash power is not at all enough if you think of bouncing. Always felt need of higher end flash.

Never used polarized filter in that fashion, but used a 77mm ND filter with a 58-77 step-up ring on my kit lens. Didnt see any issues.
Tried Polarized filter on kit and on top of that 58-77 step-up ring and then the ND filter(Wanted to cut off lot of light to get blurry effect of sea waves). Saw vignetting and reduced sharpness.

+1 for B&W.  I havent seen difference in the image quality with or without it in my use. So I mount it on lens all the time. This was not the case with my earlier Tamron 90mm(now broken) and a locally made filter, I stopped using that filter.
I go early mornings for taking photos, and there are times when dew drops falls on the lens, having a filter is much safer I feel. You dont have to touch the front glass but only the filter.

In short:
1998 - 2008 -> Canon Rebel G
2008 - 2009 -> Panasonic Lumix - PS(do not remember the model)
2009 - 2010 -> Xsi, kits + tamron 90mm
2011 - now -> 7D + 100 2.8L IS
2011 - now -> 230HS as secondary camera for family outings.

In detail:
1998 - 2008 -> Canon Rebel G. Still have it. Really liked it and made loads of images.
While visiting Canada in 2008, my wife bought Panasonic Lumix(it was a PS, do not remember the model). I used Rebel G and Lumix for a month and fell in love with Lumix. I liked the flexibility of digital camera. So I stopped using my Rebel and used Lumix till 2009. I started feeling that the flexibility of the Lumix was limited only to digital vs Roll. I couldnt control lot of parameters that I was able to in Rebel G. Arrival of my kid was the "reason :)" to upgrade to digital SLR and I moved to Canon XSi. Bought kit lenses too. That was a good jump for me. Bought Tamron 90mm and rarely used kit lenses after that. In 2010 my XSi and Tamron 90mm broke almost at the same time. So one more round of upgrade :). Bought 7D and Canon 100mm 2.8L IS. 7D and 100mm was very bulky for family tours, So bought Canon 230 HS IS as secondary camera. My current thinking is no plans to upgrade to a new body till 7D works, but you never know.

I have noticed different problem in my 7D after upgrading the F/W. The top LCD display displays the camera setting values even when I switch off the camera. It is sort of hung, power on/off do not have any effect. The only option is to remove the battery and reinsert it. This happens quite frequently say once in two or three days. Very annoying.

Avoid ignoring the tripods when using extension tubes :). If you are going more than 1:1 magnification tripod is must have. The DOF is much less even at or beyond f8, hand held precise focusing  becomes extremely tricky. Some times flash also helps.
One sample at f8 with 100mm + 25mm extension tube.

I havent used canon 180mm but have used Sigma 180mm of my friend for couple of days. I found it too bulky and very difficult to frame in field. If I add 270EX on top of it, I cant hand hold it for more than a minute. Using tripod is not always an option, especially with butterflies and dragon flies. 100mm F2.8L is very useful in the field, when I have to get down on the ground, or have to track moving insects. I find IS is useful too sometimes. As others stated, it makes framing easier too...

I do not remember the exact magnification , but very sure they are close to 1:1. And used shallow DOF. Hope you enjoy it...

Never used flash bracket for portraits so far, but I use it extensively for my macro work!!! I just cant balance the camera in one hand and flash in the other.

I had the similar problem, cant carry 7D and a lens all around every time, needed a P&S. Chose SX-230HS after much research. The far end zoom was more important to me. Macro mode is good too.
