Use the software that came with the camera (canon EOS utility) and use a mini usb to the camera and a normal usb back to laptop.  That will allow you to do remote (still wired) camera shooting using your laptop.  I use it for image playback when messing around with a photobooth.

The tokina 11-16 is also a very nice lens on crop (as well as their 16-28 on full).  Its also build like a tank.

I use the L358 with the pocket wizard adapter.  I find it extremely use full for light set ups.  I also use it for when wedding ceremonies end up with the bride and groom in shadows under a tree and the rest of the ceremony under full sun.  Its very useful when scouting locations with mixed lighting and/or low light and can quickly jot those numbers down instead of getting lots of gear out.

I second the idea of maybe looking at the 60d if you don't worry as much about the weather sealing (even though I accidentally left the 60d outside in a light rain on a time lapse and it survived).  I feel the actual image quality difference is negligible between that and the 7d (especially at higher ISO).  I've used mine for paid shoots and adding a grip gives it a nice feel regardless of the plastic change from 50d.  I feel like too many people dump on the 60D but I feel like its a nice option.  Of course if price wasn't an option I would have chosen the 7d straight out due to the additional features but at the time the 600 dollar difference made the decision easier.
