Any thoughts as to why Canon released the 40/2.8 pancake so far ahead of its mirrorless offering?

because they figured, that gazillions of snapshooters would buy it ... "becuse it is oh so cute and oh so cheap"! These people have no concept whatsoever, that a lens with 44mm flange-back will not natively fit on a future Canon mirrorless cam and that they can use it only with a fairly bulky adapter or buy yet another EF-M "pancake" lens. Canon is pretty smart. Unlike many of its customers. hehe. :-)

Why not?

A mirrorless is only on a few peoples minds - and to associate an excellent lens with an out of the way camera would rather limit the sales of it.

Who says the mirrorless will have an EF mount anyway?

The 40mm Pancake is a EF mount lens, not the "M" mount that the mirrorless will use.  That alone should be a clue.
