I sent my 5D3 in because I messed up the focus screen and told them to do the light leak repair at that same time. I shipped the package out via UPS ground on a Monday, and I got the camera back that Friday, so it was a very fast turn around. I have no idea where you got 7-10 days from, but that certainly wasn't my experience. Canon Prof Services also replaced my focus screen and cleaned it for free, which I wasn't expecting. So far I've had superb experience with them and couldn't be happier.
