I used an 85 f/1.2II to get the 50+ shots, which works out after counting pixels and inputting to the boxes:
Effective focal length 27mm
Effective aperture 0.38 (!!!)

Sure didn't look THAT narrow of a DoF, but it was a noticeable difference from a straight-up 24-70, f/2.8 @ 39mm shot, attached.

It's 27mm because you have made it into such a large format. Personally the thought of doing a 51 frame pano leaves me cold. Also I don't see that you'd need to take stitch so many frames to get the effect you want. Seems to me you've been too far away from subject. Try it again but less frames and from much closer.
