Maximal senseful Iso on 7D Mark II or sensor problem?

I tried some lenses yesterday on an workshop. 400,500,600mm primes mounted on 1DX, 5DIII, 6D, 7Dii, 70D. There I realized, that the Canon trainer´s 7D Mark II took visibly better images than mine 7D II did. The trainer told us, that his 7D II was able to use Iso 3200 without much impairment on the image quality. But my body shows much more colour noise and is not as sharp as the trainers body. We synchronized the settings. And he did an basic autofocus adjustment with an portable inclined plane with rulers and signs on. But if I raise the ISO over 800, there is much more colour noise.

Someone told me, that Canon will send out just well-chosen and maximally optimized bodies for workshops.
What can I do, or do I have to accept this limitations? Should I send it to Canon to do an inspectation?

Definitely do send it in

When the 7Dii was first released, there was definite issues with some bodies.

Check a firmware update if it does not improve send it in. I mine shows very little Color noise compared to my 60D and is definitely usable at ISO 3200.

I would also add after updating reset to factory settings. Then manual re-setup the camera. This should clear up any roge settings.

Did you expose to the right? Maybe instructor's 7DII was set for this (slight overexposure for example) so the noise would seem less.
