Can you BACKDATE the 1DX firm ware VIA EOS UTILITY?

Via EOS Utility, no. Apparently, it's possible to change the name of an old FW file to the new one (maybe other steps are needed, too, Google can help), and overwrite new with old.

In this case, I see no need. Except for a couple of bug fixes, v1.1.1 adds the AI Servo point illumination and f/8 AF. If you don't like the former, just don't turn it on (the default is Off, so if you do nothing, you'll see no change). If you don't like the latter, don't mount an f/8 TC combo, or if you do, set the lens to MF.

Back in May 2004 I bought two of the brand new 1D Mark II's. I did a firmware update that came out soon after I bought them. When I installed it on both cameras I discovered that the FireWire port didn't work. It was a bug in the new firmware. I couldn't go backwards and install the old firmware. I had to send both cameras back to Canon to go back to the old firmware.

I don't think that is something that Canon normally does, but luckily they admitted the problem and the only immediate solution was to go backwards.
