I have two lenses hanging from my 1Ds3 95% of the time, a 300mm f/2.8 or a 180mm macro. I'm leery about using a series of extension tubes and/or TC's
between these lenses and the camera body due to the weight of the glass and the body.
Regardless of whether I mount the body or the lens to a tripod, it seems like a lot of unsupported weight hanging off either end. Is it cause for concern?

Am considering a extra long tripod mounting plate, if such an animal exists, and bracing either the lens or the camera body...if it's necessary. What say you all?
 
I don't have the 180 Macro but I do have the 300 F2.8. I frequently use extenders and/or extension tubes with this lens and my 1D4 (same weight as your DS) with absolutely no issues. After all the lens is what is mounted on the tripod, the camera mount is designed to support a lot more weight than the camera and even my cheapo extension tubes are more than up to the job - let alone my Canon extenders.
Hook them up and don't worry about it.
P.S. a fairly long QR plate is handy for balancing the setup - I have Wimberley + Kirk + cheap Chinese (Arca type) plates, they all work perfectly with my 800mm let alone my 300.
