5Ds or 5Ds R

I was concerned that my older glass might not be able to take advantage of the somewhat higher detail present in the 5Ds R.

The additional resolution you will see by upgrading the 300mm is fractional with the corners better. IS and weight are more important IMO for that upgrade, you will see their benefit in real world use easier than the small increase in resolution. The old 300mm is a great lens.

Owning the 5Ds R I would recommend going with it. You will see a noticeable increase in resolution. Although it is also fractional it is very noticable IMO. I would go with the 5Ds R over the 5Ds, but only you know if you intend to shoot subjects prone to moire.

The 300 f/2.8 II is a one crazy lens on the 5ds r. I got it for portraits, and the amount of details is overwhelming, great for kids, but not for adults LOL.

The 5dsr's RAW files look awful when opened in LR, that was my reason to switch to Capture One, but I still want to give the Huelight profile a try.

Sounds reasonable. I have a profile I use for my 1Dx that I made but not totally satisfied with it. I'm looking forward to it with the 5Ds. If I like it enough maybe I'll quit sports and actually do photography for fun again
