In my mind, the main reasons to want the G15 over the S110 are the hotshoe and wired shutter release. If you don't need those, you are probably served just as well by the S110.

...for the G15 add the 28-140mm equivalent F1.8-2.8 lens (vs S110 F2.0 - F5.9), optical viewfinder & longer battery life.

My budget is around $600.
Yes, her main usage will be for easy carry-around (specially vacations, and weekend outings). I want to get her something simple and not too complicated, but yet something she can grow upon. iPhone 5's and the 'simplier' versions of P&S will not due, as I wanted a little more but perhaps something just below a Rebel lineup or similar.

Easy carry-around means slim and doesn't take up much space in her purse. Get her an S110 and she will be more than happy with the quality and it even has some manual settings.

Take a look at the Fuji X10, the X100s little brother. I hear good things.

mine was fine until it had problems then the dis-service of fuji is really something to behold
the crap fuji service is why i dont have and X10 anymore and now have an EOS M instead

thats surprising to hear. I sent my x100 in to be fixed for the aperture problem and got it back within a week.

I would suggest the Sony RX100 or Panasonic LX7. Both have AF speed almost as fast as DSLR. Both have the best picture quality within their class. All the Canon's in your list has much slower AF.

Strangely I am considering the Olympus OM-D E-M5 even though the price is much more than I would like to spend. Initially my budget was $600...but I am willing to double it for the Olympus OM-D E-M5 if it's worth it...I am still doing my research so if anyone else have any other suggestions on either the Olympus OM-D E-M5 or another camera, please advise...all feed backs are much appreciated!!

Another strong vote for the Canon G15. It's my next purchase. There's a very recent review on the G15 at DP Review that you should read. The Canon S110 is worth throwing into the mix. Its lens is not as bright and it doesn't go as wide as the G15, but it does have distinct advantage of being smaller than many smartphones. If you feel you wife would be more likely to take it with her all the time if it was purse size, then maybe the excellent S110 is the one to go for.

Remember you're buying for HER...this is not a toy for you. Think about the way she is likely to use it and locate the camera that ticks the most boxes for HER. Is she a novice? What will she do with her images? Make large prints? Put them on Facebook or Flickr galleries? Store and view them on her iPad? And so on...

Be honest in this appraisal, buy accordingly and she'll love you for it.

For your weekends away I guess there is a good chance you'll have your DSLR with you if something totally awesome comes up.
